Recipe: Vegetarian Burrito Bowl
Sep 12, 2016I could seriously eat all the burrito bowls! And I, finally, managed to make one at home – I buy a lot of them, so this is a big cost-saver for me.
Here is my super easy vegetarian burrito bowl “recipe”:
Rice
- 1 Cup White or Brown Rice of choice
- 1/2 Juice from a Lime
- Cilantro to taste
Vegetables
- 1 Red or White Onion
- 2 Bell Peppers any colour(s) will do
- 1 Small Zucchini
- Any other veggies you'd like to add!
Beans
- 1 Can Black or Pinto Beans rinsed
- 1 Can/Cob Corn
- 2 Tbsp Tomato Paste
- Taco Seasoning to taste
Toppings
- Lettuce
- Guacamole/Avocado
- Cucumber
- Cilantro
- Cheese
- Anything else your taste buds desire!
INSTRUCTIONS
Rice

Prepare as normal, but add lime juice to the water

Add chopped cilantro at the end of cooking
Vegetables

Lightly sauté in a frying pan - cook to al danté
Beans
-
Combine ingredients and simmer in a frying pan
RECIPE NOTES
Layer or divide in a bowl and nom, nom, nom!
I packed this up for lunch with the rice, beans and veggies in one container and the toppings in a separate one. I then heated up the rice container before adding the toppings.
